Creamy Avocado Kimchi Dip

This recipe turned out better than I had anticipated; in fact, I could not stop eating it and had to make a second batch! Adding avocado is a genius idea for any dressing as they create a super thick and creamy consistency which makes for an amazing dip, sauce, or even spread for sandwiches! I developed this version from my Herbed Avocado Dip recipe I posted a while back but instead added some extra ferments to make it more gut healthy. For instance, here I added miso and kimchi, two ingredients people may not be too fond of eating by themselves but when blended in this delicious dip the flavors combine for a sweet and savory sauce! Hope you all enjoy!

Did you know roughly 80% of the immune system is located in the gut? This makes gut health critical in order to maintain optimal health. Dysfunction of the gut has been linked to many autoimmune illnesses as well as seasonal allergies and food intolerances.
